Eggs: The Nutrient Powerhouse
Long accused of raising cholesterol, eggs are now back on the “healthy” food list, in moderation. At only 70 calories, eggs contain 6 grams of protein, an abundance of nutrients, raise “good” cholesterol, and have been linked to decreasing the risk of heart disease.
How do we broaden eggs’ playing field beyond accompanying your morning toast and coffee? Here are a few ideas to get the ball rolling:
Mash into tuna or chicken salad to bulk nutrient content
Dice a couple hard boiled straight onto salad greens for your protein
Poach and serve over warm, steamed vegetables
Simple frittata with any vegetables hanging out in the refrigerator
Take your avocado toast up a notch by topping it with a fried egg
Add to pasta salad to create a quick, one-bowl meal for the week
